Sephra Milk Chocolate Melts is specially formulated for use in chocolate fountains and by confectioners who want a chocolate coating that will harden quickly when molding or dipping foods. Sometimes referred to as a compound coating, the melts are made from similar ingredients as chocolate but coatings contain more than 5% vegetable fat instead of the traditional cocoa butter. Compound coatings are also made with cocoa powder instead of chocolate liquor.
